Two birthdays a week apart is a little challenging when it comes to making the cakes! It seems like you just get over making the first to turn around and have to bake some masterpiece for the second! I had considered a dino cake for Preston since he is totally obsessed with them but I figure he probably still will be for years to come. Plus it all seemed a little complicated so I decided to go with something a little more simple.

This cake is made using cupcakes which is a little easier to share out and for Preston to eat. I found this idea on Pinterest (I love looking at all the creative ideas, it passes the time while I’m feeding Jasper in the early hours of the morning and helps to keep me awake at the same time). It is so effect and so easy to make. I didn’t have a lot of time so this was perfect.

You simply bake the cupcakes, arrange them to look like scoops of ice cream from above, using ice cream cones for the bottom. You then ice and decorate the cupcakes to look like ice cream. I’m really happy with how this cake turned out for something that I didn’t have much time (I was making this today, the day after his birthday – we would be celebrating with Nanny and Poppy today, that’s why we didn’t have cake yesterday on his birthday).

Note to self, be very careful of the nutter 2 year old and his interest in the flame of the candle! Preston got very lucky, nearly burning his finger after trying to touch the candle! You will see Addi and myself trying to restrain Preston in the photos so he doesn’t hurt himself.

    That’s a clever cake Melissa – are you able to put it in your food file on this site? Speaking of candles – I wonder why we have them – where did that idea start. I also have a picture of Preston’s Daddy reaching for the candle on his first birthday!

    I should be able to put it in. I forgot that you hadn’t seen the cake! I was impressed with the idea, simple yet looks great. My type of last minute cake!! That’s interesting, I’m not sure. I could imagine a 1 yr old doing that but Prez was a little silly trying to touch them. But it is Prez hehe act first, think later :)
